Taryn's Carrot Cake Overnight Oats

What makes this recipe hormone healthy: healthy fats and fibre are key for healthy hormones. Walnuts are a great source of omega 3 fats. The fibre and the protein from the oats help stabilize blood sugar levels to keep your energy and mood balanced and build healthy hormones.

Ingredients
  

  • 1/2 cup grated carrot
  • 1/2 cup quick oats
  • 1 tbsp ground flax seeds
  • 1/2 cup coconut milk unsweetened, carton
  • 1 cup filtered water
  • 1/2 tsp cinnamon
  • 1/4 tsp ground ginger
  • 1/4 tsp ground nutmeg
  • 1 tbsp maple syrup
  • 2 tbsp walnuts
  • 1 tbsp coconut flakes

Instructions
 

  • Combine all the ingredients except walnuts and coconut flakes and let sit for a few hours, or overnight. When ready to serve, top with coconut and walnuts and enjoy!
